Based on the definition of log shipping i would agree with you...the user profile service is one of the service applications that cannot be log shipped.
Furthermore the valuable data in a sharepoint farm is not the config data, its the content data. Ergo, your answer is totally correct. Always LOG ship the content data. You can still view the data even if the config is not the same.
